The current iPod Touch was released 1,000 days ago, and we still don't have a new model.

It is currently the oldest Apple product being sold and was released in May of 2019. The iPod Touch is not as expensive as the iPhone with a starting price of $199, and it's the smallest iOS device Apple sells. It also has the headphone jack, which was removed from the iPhone lineup when the iPhone 7 came out in 2016.

In terms of specs, it's not really the best. The current model (7th gen) was a very minor update, pretty much the only changes were getting the A10 Fusion chip and 256GB storage option, but everything else was the same as the previous generation. Surprisingly, it's still receiving updates and is on iOS 15.3.1. The iPod Touch is most commonly (today) used with kids, before they get an iPhone, mainly because of the low price.

The iPod Touch is the only one in the iPod lineup that is still available from Apple because Apple discontinued the iPod Nano & Shuffle in July of 2017. As of right now, we don't know and don't think there will be another iPod Touch model. There is a great chance Apple will discontinue the iPod Touch one of these days.
